WHere is a simplified version of a drink found on a new drinks list. Designed as a party-sized premix that is loaded with essence of a holiday season, making it excellent for your festive gathering. Reserve the remaining syrup to use in breakfast cocktails, desserts, or for additional servings of this cocktail.

The Bikini Cocktail

Serves 10 servings

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Cocktail (yields 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place every components in a pot, heat until it reaches a light boil, mixing until the sugar dissolves. Then, turn off the burner and leave to cool fully. Decant into a sealable bottle, seal and store in the refrigerator, where it will keep for up to four weeks.

For the Batch Mix: Pour the specified liquid ingredients in a big jug, allow it to infuse for an hour, then pass it through preferably using cheesecloth, so it's perfectly clear.

For serving: Pour 85ml from the cocktail base into a mixing glass packed with ice, and stir carefully for about 60 seconds until cold. Strain to a frosted cocktail glass or similar, garnish with some cranberries adding the final touch with a brief mist of the essential oil above the glass.
